Orange-Ginger Waffles w/ Cranberry Butter

Christmas brunch just got cranked up a notch with this match made in holiday heaven.

While I definitely think the possibilities are endless for cranberry butter--for brunch and beyond--waffles were probably the first thing that came to mind for me.


These waffles play off the orange flavor in the cranberries that speckle the butter, and they get a warming spicy boost from a bit of ground ginger in the batter.


It had been a while since we busted out the waffle maker around here, so the monsters were pretty jazzed to try the results.


Normally they're waiting, faces pressed up against the back door, while I shoot my recipes, ready to pounce as soon as the session wraps up. This time the littlest one just couldn't wait.






I decided to reshoot the waffles the next day, and this time some of his big brothers wanted in on the action.




With all these hams to go with my waffles, I've got myself the makings of a good brunch for sure!


Of course you could serve these waffles with any of your favorite toppings, but the cranberry butter really makes them sing. Fa la la la laaaaa!


Here's what you'll need:

  • 1 ½ cups almond flour

  • 1 ½ cups cassava flour

  • 1 tsp baking soda

  • 1 tsp baking powder

  • ½ tsp fine salt

  • ½ tsp ground ginger

  • 1 ½ cup almond milk

  • 2 T orange juice (or lemon juice)

  • 1 T orange zest (or 6 drops orange essential oil)

  • 2 tsp vanilla extract

  • 3 large eggs

  • 3 T maple syrup

  • 3 T coconut oil, melted

  • Cranberry Butter, for serving

Here's what you'll do:

  1. In a mixing bowl, whisk together the first 6 ingredients (almond flour-ginger).

  2. In a large pyrex measuring cup or small mixing bowl, use a fork to combine the remaining ingredients.

  3. Whisk the wet ingredients into the dry ingredients until fully incorporated and smooth.

  4. Turn on the waffle iron and cook according to manufacturer’s directions, about 3 minutes per waffle.

  5. Serve slathered with lots of yummy Five Monsters Paleo Cranberry Butter!
