Valentine's Day is upon us, and if you're anything like me, that means you're thinking in pink.
If I could get my act together, right now my house would be littered with hearts and streamers in all shades of pink and red instead of with laundry, toys, and dishes--but c'est la vie.
While my decorating dreams may be on hold for now, my smoothie dreams are fully realized in this love potion recipe.
My Love Potion Smoothie combines superfoods like exotic goji berries, delicious dark cherries, and sweet strawberries with protein-packed cashews, rich coconut cream, and alluring vanilla.
Ground vanilla bean powder instead of vanilla extract makes it Whole30-friendly.
Sometimes dried goji berries (also called wolf berries) can get a bit hard and stiff, so I soak them in coconut or nut milk for at least 10 minutes before blending everything up so that everything blends smoothly.
I add canned coconut cream to give the love potion that cloud-like etherealness you don't find in your everyday smoothie.
This would be the perfect Valentine's Day breakfast to make for your kiddos or the love of your life--or just to show yourself a little much-needed self-love.
If you wanted to turn this smooth sipper into a breakfast bowl, you could beautifully arrange some sliced banana, fresh raspberries, raw cacao nibs, a sprinkling of chia seeds, and maybe even some bee pollen to take things to the next level.
Here's what you'll need:
¼ cup dried goji berries (aka wolf berries)
1 ½ cups coconut (or almond) milk
1 (13.5 oz) can coconut cream
¼ tsp ground vanilla (vanilla powder)
¼ cup cashews
2 cups frozen pitted cherries
2 ½ cups frozen strawberries
Here's what you'll do:
Pour the coconut or almond milk over the dried goji berries and let them soak for at least 10 minutes.
Place the goji berries, milk, and remaining ingredients in the blender and blend until completely smooth and creamy. Enjoy!
