Everything-bagel-inspired items are definitely enjoying a moment in the spotlight.
If I’m honest, being so on-trend kinda makes me cringe. But some things are popular for a reason--like paleo!
So, unashamedly bringing two great trends together, I give you “Everything” Sweet Potato Toasts.
The idea for these tasty and versatile little beauts initially came to me when Monster Padre purchased a massive container of dehydrated diced onion instead of our go-to onion powder. I probably gave him the stink-eye for a good minute before the cartoon lightbulb above my head lit up and I excitedly added seeds of poppy and sesame to my grocery list.
If you’ve followed Five Monsters Paleo for a minute, you may have seen my love of toasted sweet potato rounds expressed in the form of slider buns--Yum!
Today's version follows the exact same method I would use for burger buns, or even fruit-and-almond-butter-topped breakfast toasts: toss well in oil, bake in a single layer at 425 degrees F for 12 minutes on one side and 10-12 on the other. The only difference is that these bagel-inspired bites get a tablespoon of “everything seasoning” tossed in with the oil.
These tasty “toasts” could be jazzed-up slider buns, a side (or bed) for any sort of entrée, or the perfect canvas for all manners of savory takes on brunch. While they are vegan, Whole30-friendly, and totally delicious on their own, my favorite way to enjoy them harkens back to my go-to order at my favorite bagel place in my pre-paleo days: topped with creamy avocado and briny-sweet smoked salmon.
Here's what you'll need:
2 medium-sized sweet potatoes
Olive or avocado oil
“Everything” Seasoning:
2 T dehydrated onion flakes
1 T sesame seeds
1 T poppy seeds
1 T coarse salt
½ tsp granulated garlic
¼ tsp crushed red pepper flakes (optional)
Here's what you'll do:
Preheat the oven to 425 degrees F.
Peel sweet potatoes and cut into approximately ¼-½-inch slices.
Add the slices to a large bowl, and toss with enough oil to coat all the slices really well.
Make the seasoning by combining all remaining ingredients in a small bowl. Add 1 T seasoning to the sweet potatoes and toss really well to distribute. Store remaining seasoning in a small jar or airtight container.
Arrange slices in a single layer on a rimmed baking sheet and bake at 425 for 12 minutes. Use a fork to carefully flip each slice, and bake an additional 10-12 minutes or till just beginning to brown.
If you leave off the salmon and sprinkle on some microgreens, you’ve got yourself a vegan, paleo, Whole30 avocado toast, tying in one more trend for the win!
